they wore helmets so when they crashed they didnt damage there ears  those loud bangs could seriously affect there hearing so they couldnt be a kamikazee pilot with bad hearing
it actually dulled the bang to a thud

| My guess is that because Japaneze people are short generally they wear helmets to add some cm on their height. They also have pillows on the plane seats.

Do you really think a helmet can save your life in a plane crash 
On a serious note it is because the helmet carries a lot of communication controls, mic, etc... so that helps them to achieve their mission I guess...
On a non serious note it is because they need to hit harder the target

maybe no one tells them they are kamikaze soldiers until they get them really drunk
either that or they wait till the very last minute to tell them and then just jump out the plane with the only parachute available
